Christmas menus to whet your appetite

This week, our chef, Lucasz Surowka revealed the special Christmas menus that he has planned for the festive days of Christmas Eve, Christmas Day, Boxing Day, New Years Eve and New Years Day.

Christmas menus conjure up wonderful memories for all of us, but more so for our older residents many of whom have experienced Christmas in times when food was not as plentiful as it is now, during wartime, with their parents, their own families and their grandchildren. Now they are spending Christmas with their Fairfield family, which is why we make it as special as we can for everyone – staff and residents alike!

This week, our chef, Lucasz Surowka revealed the special Christmas menus that he has planned for the festive days of Christmas Eve, Christmas Day, Boxing Day, New Years Eve and New Years Day.

Lucasz says,”We really treat residents at Christmas time by creating special dishes that are memorable, festive and taste delicious. My favourite is always the traditional Christmas day lunch of roast turkey with all the trimmings followed by Christmas Pudding with brandy butter, cream and custard, which each and every resident really enjoys.”
The kitchen team really goes to town with their special festive dishes. For example, Christmas Eve lunch is fillet steak mignon served on a brioche toast with pate and a reduced balsamic glaze, sauté potatoes and green beans, which is what you might expect to eat in a top restaurant!

Following the Fairfield tradition, lunches will be served with red or white wine and on Christmas Day and New Years Day liqueurs will be offered in addition to the usual after lunch coffee and mints.

Lukasz adds, “All the meals in our Christmas menus will be home cooked and prepared in our kitchen using fresh local and seasonal produce. I try to follow what they would have had at home, so Boxing Day lunch is cold meats and salads and New Years Day is roast saddle of lamb. Of course, suppers tend to be lighter so that we don’t over eat – which everyone has the tendency to do at Christmas!”

Families and visitors are much welcomed over the festive period to visit their relatives. There is always a Christmas cake, Yule log or luxury chocolate biscuits to greet them and make them feel at home.
